Electric pressure cooker buying guide

Pressure cookers can be found back as far as the 17th century by a French physicist named Denis Palin.  His device called the steam digester was a closed pot with a very tight lid.  Water was then heated up causing steam to be trapped within the pot.  The problem was there was no pressure-release mechanism and this caused the device to explode.

Over the next 200 years, the concept was designed much better and safer and in the 1930’s it was introduced into home kitchens.

How do pressure cookers work?

Pressure cookers work by trapping steam as it is heated.  As this steam builds, the pressure increases.  This will drive the boiling point of water past the 212 F.   Because of these higher temps it makes cooking time shorter.

Pot size

Post size is important when choosing an electric pressure cooker.  If you are single or even just a couple you could easily get away with the smaller cookers that offer 6 quarts.

Larger families should look for pot sizes of 8 quarts to maximize the amount of food they produce.

Pressure cooker program features

program settings are looked at in two different ways depending on who you speak with.  There are some that want easy to use features that they only need to press one or two buttons and the food starts cooking.  Basically, too many features can be difficult or intimidating to use.

You then have the tech camp side that wants as many features as possible on their device.  Good thing is that there is a pressure cooker for anyone liking.   For example the:

Instant Pot Duo Evo Plus 9-in-1 Electric Pressure Cooker

is very featured rich that offers many different settings.

Quick release

If you are new to using a pressure cooker you may not know what a quick release is or what it means.  The quick-release in a pressure cooker is a switch that allows a pressure cooker to vent and release the steam quickly when the cooking time ends.

Indicator pin

An indicator pin in a pressure cooker allows for the identification if there is still pressure inside the cooker.  When the pin is down it is safe to open the pressure cooker.

When the indicator pin is up on the pressure cooker it is an indication there is still pressure that is still inside the cooker.  This pin prevents the cooker lid from being opened.

Pounds per square inch

Electric pressure cookers use lower pressures (12 psi).  Stovetop pressure cookers have 15 psi.  So you understand the lower the pressure inside a cooker means lower temperatures.  Cooking times will be longer when using electric pressure cookers.  Using a lower psi does give you safety confidence over stovetop cookers.

Electric cookers can build up pressure up to 15 psi but during the cooking processes, it maintains a lowe pressure.  Again, electric pressure cookers will allow you to set it and forget it over the stove top counterparts.

How to cool down your pressure cooker

There a few ways to bring the pressure down in a cooker.

Natural release:  Take the cooker off any heating element to allow the temperature to come down slowly.  Once it cools down enough it will allow the spring-loaded lock to disengage

Coldwater release:  running the cooker under cold water until the cooker depressurizes.   This can not be used for electric models.

Quick-release:  pressing a button to allow steam within the cooker to escape.
