When you but a pressure canner there are a few things you should know.  We have put together a list of attributes that we believe are important to look at when you decide to get a pressure canner.  

Size and capacity of the pressure canner

The size of your pressure canner will simply come down to how much canning you plan on doing.  if you want to process a lot of food in the shortest period of time then you will need to find a large capacity pressure canner that can fit enough jars each run to minimize your time.  

If you are not canning large amounts or are using this as a pressure cooker as well and don’t need a ton of food then a smaller cooker will probably work well.  Keep in mind you will need to store this cookware piece somewhere in your house as well. 

The material of the pressure canner

You will typically find two main materials when looking for pressure canners.  Stainless steel and aluminum.

Stainless steel is more durable than aluminum material.  But there is a trade-off.  Aluminum distributes heat better and more even.

Aluminum while less expensive is not as durable but manages to heat better.  Depending on how often you use it you could get away with aluminum.
